It combines the classic flavours of a traditional Cherry Bakewell tart with the ease of a rocky road. Think crunchy digestive biscuits, glacé cherries, mini marshmallows, and creamy white chocolate all brought together with a splash of almond extract. Sounds too good to be true right?

This Cherry Bakewell-inspired rocky road has been a huge hit with my family. I honestly didn’t expect it to disappear so fast! The combination of sweet cherries, almond flavour, and creamy white chocolate is simply irresistible. It’s a great twist on the classic rocky road recipe and adds a fruity, nutty twist that makes it perfect for spring and summer baking.

When the weather heats up, no one wants to turn on the oven. That’s why no-bake desserts like this are ideal. Just mix, chill, and serve, it’s that simple. This rocky road is a great way to add something easy, sweet and refreshing to your summer dessert table.

Ingredients

  • White chocolate– I personally use a supermarket own-brand for this rocky road. I don’t necessarily think using high quality chocolate is important for this recipe. The one I buy here in the UK is from Aldi and it is 50p.
  • Digestives- I used plain digestives for this recipe that I crushed up slightly. You could use white chocolate digestives or even shortbread! Digestives are similar to graham crackers in the US.
  • Raspberry Jam– You can use any Raspberry Jam for this recipe, I just use my favourite one which is from Fearne&Rosie. You can use homemade raspberry jam if you’d like! You could also use cherry if you’d like!
  • Glace Cherries– You’d usually find these in the dessert or baking section of your supermarket!
  • Mini marshmallows– For this recipe, you will want to use mini marshmallows! Any bigger marshmallows won’t work as well!
  • Almond Flavouring- I used this flavouring to add to my white chocolate but you could use your favourite flavouring!
  • Flaked Almonds- I used flaked almonds in the base mixture to add some nutty crunch to this rocky road!
  • Icing- For the decoration I used white chocolate, raspberry jam and icing which i swirled through the chocolate! I used some icing on the top as sometimes bakewell tarts have icing on so i wanted to bring as much classic bakewell elements in that i could! You could add some flaked almonds on top or cherries as well if you’d like!

  • make sure to flatten your rocky road and make sure it is compact in the tin. This will help you get perfect rocky road slices and avoid it crumbling!
  • Line your tin with parchment paper for easy removal.
  • I chose to make a thick rocky road and use a 8″ tin but you could make it thinner if you’d like by using a bigger tin!

Ways To Change Your Rocky Road

  • Sprinkle with flaked almonds for extra crunch and flavour!
  • This is a no bake dessert recipe but you could bake yourself some frangipane filling, break it into chunks and add it into your mixture.
  • You could add some shop brought cherry bakewells into the mixture as well if you’d like to add some frangipane without baking some!

Ingredients

  • 200g Digestive Biscuits (Crushed into medium sized biscuits).
  • 400g White Chocolate
  • 1-2 tsp Almond Flavouring
  • 100g Mini Marshmallows
  • 200g Glace Cherries
  • 50g Flaked Almonds

Decoration

  • 200g White Chocolate (Melted).
  • 50g Icing Sugar (Mixed with a little bit of water to make a thick water icing mixture).
  • 50g Raspberry Jam
  • 1 Crushed Digestive Biscuit

Instructions

  • Line a 8×8" with baking paper/ parchment paper and set aside.
  • In a large bowl, add chocolate and almond flavouring and melt in a microwave in short bursts. Stir thoroughly each time until smooth.
  • Once it's melted and combined, add in the mini marshmallows, chopped digestive biscuits, glace cherries, flaked almonds and mix until everything is coated in the chocolate mixture.
  • Pour your mixture into the tin and spread until it’s even (I like to flatten mine down using baking paper to ensure it is compact and not crumbly!)
  • Melt your white chocolate in a microwaveable bowl in short bursts (20 seconds) and stir well in between as white chocolate can burn quite quickly.
  • Pour your white chocolate on top of the rocky road and spread it out evenly. Swirl through some raspberry jam, icing mixture, sprinkle some crushed digestives on top and set in the fridge for 3 hours or until firm.
  • Once set, slice into slices. I sliced mine into bigger chunks so I got 9 slices but these rocky roads are moreish so you could slice them into smaller chunks and get 18 pieces!

Notes

  • This recipe lasts 4-5+ days in the fridge of room temperature.
  • You can freeze this for 3+ months.
  • Use baking paper to flatten your rocky road to ensure it is compact, this helps the mixture not crumble when you slice it!
  • If you struggle to cut this rocky road, use a warmed up sharp knife.
  • Updated recipe, I decided to remove the butter and syrup as it tended to split Occasionally so ive decided to just keep it chocolate! If you want to add butter and golden syrup use 50g of each!
