Raspberry Ripple Rocky Road (No-Bake Summer Dessert!)
This is hands down one of my favourite rocky roads I’ve ever made! It’s fruity, loaded with sweet raspberry flavour, and has the most delicious raspberry fudge from The Finest Fudge Co. I wanted something light, vibrant, and perfect for summer, so this fruity twist on classic rocky road was created. The raspberry fudge really takes it to the next level but feel free to get creative! You can easily swap in any flavour fudge to suit the season, occasion, or your cravings. It’s the easiest way to turn a simple rocky road into the best one you’ve ever had.
If you’re looking for an easy, fun, and absolutely delicious summer bake (without even turning on the oven!), this Raspberry Ripple Rocky Road is just what you need. Packed with crushed Jammie Dodgers, mini marshmallows, creamy white chocolate, and the star of the show… raspberry flavoured fudge! this treat is fruity, fudgy, and totally delicious.
It’s the ultimate no-bake dessert for summer picnics, family gatherings, birthday parties, or when you just want something sweet but low-effort. Both Kids and adults alike will love it!

Ingredients
- 400g white chocolate– For that creamy base. I used a supermarkets own brand for this! Its 55p from aldi or tesco, Id avoid using baking chocolate.
- 250g raspberry fudge– Chopped into chunks. I used this fudge! It is so creamy and delicious!
- 100g mini marshmallows– Adds chewiness, You can skip the marshmallows and make a tiffin instead if you aren’t a marshmallow fan.
- 100g Jammie Dodgers– Roughly crushed.
- 100g Digestives- Roughly chopped. (I used a mix of Raspberry jammie dodgers to add some more raspberry flavours into the rocky road and I used some digestives).
- 1 tsp raspberry extract (optional)– For extra raspberry flavours.
- Pink or red food colouring (optional)– To give that ripple effect.
- Extra Jammie Dodgers or freeze-dried raspberries (optional)– For topping.
- Raspberry Jam- I used raspberry jam on top of the rocky road and swirled it into the chocolate to add more delicious fruity flavours!

If you can’t get hold of the fudge I used, feel free to use this recipe to make your own homemade raspberry fudge!


How To Make This Raspberry Rocky Road
Prepare your tin
Line an 8×8″ square baking tin with parchment paper.
Melt the chocolate
Gently melt the white chocolate in a heatproof bowl over simmering water (or microwave in 30-sec bursts). Let it cool slightly.
Add the flavour
Stir in raspberry extract and a drop or two of food colouring if using.
Mix the goodies
Fold in chopped raspberry fudge, marshmallows, and crushed Jammie Dodgers. Mix until evenly coated. Try to do this as quick as possible to reduce the chance of the fudge melting.


Pour & smooth
Pour the mixture into the lined tin. Use a spatula to spread it evenly. I like to use baking paper and press the rocky road firmly into the tin to make sure it is compact.


Top it off
Melt some more white chocolate and pour on top of the rocky road and smooth it out evenly. Press extra marshmallows, Jammie Dodger pieces or freeze-dried raspberries on top for texture and decoration.


Chill
Refrigerate for at least 3 hours or until fully set.
Slice & enjoy
Cut into squares or bars and serve!

Tips & Variations
- Use dark or milk chocolate if you prefer it richer.(I personally think white chocolate pairs perfectly with the Raspberry flavours as I love white chocolate and raspberry but milk chocolate could work amazingly too!)
- Can’t find raspberry fudge? Swap for vanilla or white chocolate fudge and swirl in raspberry jam. Or skip the fudge and make a delicious raspberry ripple rocky road OR Use this homemade fudge if you can’t find raspberry fudge.
- For a crunchier texture, add crushed freeze-dried raspberries or cornflakes.
- Store in the fridge for up to 5 days in an airtight container.
- Freezes well for up to 2 months. just defrost before serving.
- For this Raspberry rocky road recipe, I use an 8-inch square tin. This size gives you a lovely thick, chunky rocky road. I like to press the mixture in firmly so it sets well and holds together nicely when sliced. To do this, I wear gloves and use my hands to press the rocky road flat into the tin. Alternatively, you can place a piece of baking paper over the top and use the back of a spoon or a flat spatula to press it down firmly. This helps to pack everything in tightly and avoids a crumbly texture once it’s set.
- If you’d prefer a slightly thinner rocky road, feel free to use a 9-inch tin instead. It will spread the mixture out more but still slice beautifully.

Frequently Asked Questions
Can I use other biscuits instead of Jammie Dodgers?
Yes! Digestives, shortbread, custard creams, or even Golden Oreos work great.
Do I Have To Use Fudge?
No! The fudge is optional, it makes it EXTRA delicious but it will still be amazing without!
Can I make this ahead?
Absolutely. I find it is actually better once chilled overnight.
Is it kid-friendly?
It is! Kids will love helping with this one and it’s safe since it’s no-bake.
Can I make it vegan?
Yes! use vegan white chocolate, vegan marshmallows, vegan fudge, and suitable biscuits.

Raspberry Ripple Rocky Road
Ingredients
- 400g White Chocolate (Melted).
- 100g Jammie Dodgers (Chopped).
- 100g Digestives (Chopped).
- 250g Raspberry Ripple Fudge (Chopped).

- 1 tsp Raspberry Flavouring
Topping
- 200g White Chocolate (Coloured pink, colouring it pink is optional).
- 2-3 tbsp Raspberry Jam
- 50g Mini Marshmallows
Instructions
- Line a 8×8" with baking paper/ parchment paper and set aside.
- In a large bowl, add your chocolate and raspberry flavouring and melt in the microwave in short bursts. Stir thoroughly each time until smooth.
- Once it's melted and combined, allow it to cool slightly. Add in the mini marshmallows, fudge, chopped biscuits and mix until everything is coated in the chocolate mixture.
- Pour your mixture into the tin and spread until it’s even (I like to flatten mine down using baking paper to ensure it is compact and not crumbly!)
- Melt your white chocolate in a microwaveable bowl in short bursts (20 seconds) and stir well in between as white chocolate can burn quite quickly. (Stir pink food colouring in, if you're using it).
- Pour your white chocolate on top of the rocky road and spread it out evenly. Swirl through some raspberry jam, sprinkle some mini marshmallows and digestives on top and set in the fridge for 3 hours or until firm.
- Once set, slice into slices. I sliced mine into bigger chunks so I got 9 slices but these rocky roads are moreish so you could slice them into smaller chunks and get 18 pieces!
Notes
- This recipe lasts 4-5+ days in the fridge of room temperature.
- You can freeze this for 3+ months.
- Use baking paper to flatten your rocky road to ensure it is compact, this helps the mixture not crumble when you slice it!
- If you struggle to cut this rocky road, use a warmed up sharp knife.
- Updated recipe: I decided to remove the butter and syrup as it tended to split Occasionally so ive decided to just keep it chocolate! If you want to add butter and golden syrup use 50g of each!
