Blondies Guide 101

Discover how to make the perfect fudgy blondies with the best flavour, fudgy texture, and simple tips for the perfect results every time.

This is my base white chocolate blondie recipe, I created this recipe to give you a good base to create your own blondie flavours!


What Are Blondies?

At first glance, blondies and brownies might look similar, they’re both baked as squares or bars, have a soft, chewy texture, and are served in slices. But the key difference comes down to flavour and ingredients.

Blondies

  • Made with vanilla and White chocolate as the main flavour base instead of cocoa.
  • Often use white chocolate for sweetness and creaminess.
  • Can be flavoured with fruits (like lemon & blueberry), nuts, or spices.
  • Texture is usually fudgy and chewy, just like a brownie.

Brownies

  • Made with cocoa powder or melted dark chocolate as the main flavour.
  • Rich, deep chocolate taste.
  • Can be fudgy or cakey, depending on the recipe.
  • Commonly topped with chocolate chips, nuts, or swirls of caramel/peanut butter.

In short: Blondies are the vanilla based cousin of brownies, same chewy texture, different flavour profile. If brownies are all about chocolate, blondies are all about buttery white chocolate sweetness with endless flavour variations.

How to Tell When Blondies Are Done

1. Don’t Rely on the Skewer Test

The classic “clean skewer” method works for cakes but not for blondies. Blondies are meant to be gooey and fudgy, if a skewer comes out completely clean, they’re likely overbaked.

2. Look for Set Edges

Check the edges of your blondies. They should look set, slightly golden, and starting to pull away from the sides of the tin. This is a good sign they’re ready to come out of the oven.

3. Slightly Soft Centre is Perfect

The middle of the blondies should still look soft and a little underbaked when you remove them from the oven. They’ll continue to cook slightly in the residual heat and will firm up as they cool.

4. Cooling Time is Essential

Let blondies cool at room temperature then place in the fridge for 3-4 hours or overnight to set. This helps them set into that perfect chewy, fudgy texture without falling apart. This is the most important tip for fudgy blondies, I Highly recommend chilling them overnight but even a few hours helps you get that fudgy texture that blondies should have! It is important to remember blondies are similar to brownies, they’re meant to be fudgy not cakey!

5. Visual Cues Over Time

Oven temperatures can vary, so rather than following bake time alone, use visual cues:

  • Edges are golden brown.
  • Top is shiny and crinkly.
  • Centre jiggles only slightly when you move the tin.

Essential Ingredients for The Perfect Blondies

1. Melted Butter for Fudgy Texture

Using melted butter instead of creamed butter ensures a dense, rich crumb rather than a fluffy, cake-like one.

2. White Chocolate

Adding white chocolate to the base of a blondie recipe isn’t just about extra sweetness, it helps create a Fudgy texture, The cocoa butter in white chocolate helps create a soft, dense, and chewy blondie rather than a dry, cakey one.

3. Eggs for Structure

Eggs bind the batter and contribute to that perfect chew. I like to add two eggs and one egg yolk, adding the extra egg yolk creates a chewier, fudgy texture!

4. Golden Syrup

Golden syrup! One of my favourite ingredients for blondies and brownies.

  • Keeps blondies soft and fudgy– Golden syrup is an invert sugar, which means it helps retain moisture. This gives blondies that chewy, gooey texture we all love.
  • Improves shelf life– Because golden syrup locks in moisture, blondies stay fresh and soft for longer. Ideal if you’re baking ahead or for a bake sale.

Golden Syrup alternatives-

If you can’t find golden syrup, you can Substitute for these instead: light corn syrup, light treacle, honey or maple syrup!

5. Mix-ins & Flavour Variations

  • White chocolate chips for creaminess
  • Fruit like blueberries or raspberries for freshness
  • Nuts for crunch
  • Swirls of caramel, peanut butter, or jam for extra indulgence
