Mummy Cupcakes

Light & fluffy chocolate mummy cupcakes topped with buttercream, white chocolate drizzle & edible eyes. Cute, spooky Halloween cupcakes kids & adults love!

Ingredients
  

Cupcakes-
  • 175g Baking Spread
  • 175g Light Brown Sugar
  • 3 Eggs
  • 145g Self Raising Flour
  • 30g Cocoa Powder
  • 3 tbsp Milk
  • 1 tsp Vanilla
Buttercream-
  • 200g Unsalted Butter (Softened).
  • 200g Icing Sugar (Use 400g if you like a sweeter buttercream).
  • 50g Cocoa Powder
  • 3-4 tbsp Milk
  • 200g White Chocolate (Decoration).
  • 24 Edible Eyes

Method
 

  1. Preheat your oven to 180°C (160°C fan) and line a muffin tin with cupcake cases.
  2. Beat together butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla, flour, cocoa, and milk until smooth.
  3. Fill each case ¾ full and bake for 18–20 minutes or until a skewer comes out clean.
  4. Let your cupcakes cool on a wire rack before decorating.
  5. Make your buttercream by beating your unsalted butter until light and fluffy. Add in your icing sugar, cocoa powder and milk and beat until smooth and creamy. Transfer into a piping bag with a piping nozzle.
  6. Swirl chocolate buttercream on top of each cupcake. Drizzle melted white chocolate over the buttercream to look like bandages.
  7. Stick edible eyes on top while the chocolate is still soft.
