It’s official, I’m completely obsessed with Mini Eggs! Honestly, I don’t know about you, but I can never stop at just one handful… I end up finishing the whole bag in no time. They’re just that irresistible! You all voted for this recipe over on my Instagram, and I am so excited to finally share it with you, say hello to my Mini Egg Cookie Nests!

These cookie nests are a fun, festive, and super easy dessert that the whole family will adore. Soft, chewy cookie dough shaped into little nests, baked to perfection, and filled with a mountain of colourful Mini Eggs, what’s not to love? They’re perfect for Easter baking, springtime celebrations, or even just as a cheerful treat to enjoy at home.

I have to admit, I’m going to be a little lost when Easter comes to an end. Lately, my kitchen has been overflowing with Mini Egg, Creme Egg, and bunny-themed bakes, and it’s been such a joyful, chocolate-filled season. When it’s time to switch back to “normal” baking, I might be a little confused! But for now, I’m fully embracing all things festive, sweet, and chocolatey. These Mini Egg Cookie Nests are the perfect way to end the season on a high note and they’re so much fun to make with kids too!

Easter Cookie Nests

So, I’m sure we have all seen the bronuts! Brownie in a doughnut shape. DELICIOUS. These are like that but made with cookie instead, they’re a cookie in the shape of a doughnut!

For these cookienuts, you need a silicone doughnut mould! You roll the dough into a sausage shape and press it into the mould! As the mould is silicone, the middle wants to move around so just be careful when pressing your cookie dough in so you get the perfect circle cookienuts! I also spray my moulds with cake release spray just to ensure they come out perfectly!

I decorated these cookienuts, Easter themed because I’m loving the Easter bakes at the moment but you can decorate them however you’d like!

What screams Easter more than Mini Eggs and nests? To make these Mini Egg Cookie Nests extra festive, I dipped each nest in silky milk chocolate and topped them with Cadbury Flakes. I love how the Flake adds texture and really gives that perfect “nest” appearance!

The cookie dough already has Mini Eggs mixed in, but of course, we need more on top. Each nest gets three colourful Mini Eggs. I especially love using the pink, yellow, and purple Mini Eggs, they’re so vibrant and make the nests really pop. Sure, they all taste the same, but in my opinion, pink is hands-down the best!

Cookie Dough

I used my mini egg cookie recipe for these cookie nests and it worked perfectly! You don’t need to freeze these though so that’s a win! If you want to make these outside of the Easter season, change the mini eggs for chocolate chips!

  • Butter- I recommend using room temperature unsalted block butter in this recipe as I find the cookie holds its shape better!
  • Sugar- I use Caster sugar in these cookies!
  • Egg- I use one egg and one egg yolk in this cookie recipe. Adding an extra egg yolk makes these cookies chewy and delicious!
  • Flour- I use plain flour, I wouldn’t recommend using self raising flour as your cookies will be like cake! I also use cornflour as it makes the perfect texture but if you don’t have access to this, add an extra 25g of flour!
  • Baking Powder/Bicarb- I use a tsp of baking powder in these cookies to get the perfect chewy texture!
  • Golden Syrup- Golden syrup adds more sweetness to these cookies and it also contributes to a more moist and chewy texture, making them irresistibly delicious.
  • Mini Eggs- I used Cadbury Mini Eggs but you can use Mini Eggs from Aldi, Lidl or M&S. So many brands have their own mini eggs now, such as smarties, kinder and lindt! Feel free to use whatever kind of Easter chocolate you’d like!

Tips & Tricks

  • Some people use cold cubed butter for their cookies but I prefer to use softened butter and cream my butter and sugar together!
  • The cookie dough can be frozen for up to three months.
  • You can use a stand mixer, electric whisk or even a fork and arm muscle for this recipe!
  • Allow your cookienuts to fully cool before removing from the mould.
  • If you want a chocolate cookie base instead use 210g plain flour and 50g cocoa powder!

You can use whatever chocolate you’d like, feel free to swap Mini Eggs for other chocolates like M&Ms or chocolate chips.

Absolutely. Freeze the shaped doughnuts for up to 3 months. Bake from frozen, adding 1–2 extra minutes.

Ingredients

  • 120g Unsalted Butter
  • 200g Caster Sugar
  • 1 Large Egg
  • 1 Egg Yolk
  • 1+1/2 tsp Baking Powder
  • 1/2 tsp Bicarbonate of Soda
  • 1/2 tsp Salt
  • 260g Plain Flour
  • 20g Cornflour
  • 1 tbsp Golden Syrup
  • 1 tsp Vanilla
  • 150g Chopped Mini Eggs
  • 150g Milk Chocolate Chips

Instructions

  • Preheat the oven to gas mark 5/ 190c and grease the doughnut moulds.
  • Add the unsalted butter and caster sugar to a bowl and beat until creamy. You will want to cream these together until fully in-cooperated, you don't want to cream them until light and fluffy!
  • Add in the plain flour, cornflour, baking powder, bicarbonate of soda, salt and chocolate and mix. Your mixture will be dry, this is where the egg brings it together!
  • Add in your eggs, golden syrup and vanilla and mix until a cookie dough has formed! Your dough should be coming together in clumps but still "shaggy" and start coming away from the bowl!
  • Weigh the cookies out into eight cookie dough balls, they're about 100g each!
  • Press the cookie dough into the doughnut mould. I get my cookie dough, slightly roll it into a sausage and press into the mould.
  • Place the moulds onto a baking tray. This makes it easier to get in and out of the oven!
  • Bake the cookienuts in the oven for 12-14 minutes and then cool for 30 minutes. Once cool remove from the moulds.
  • Melt the milk chocolate in a microwaveable bowl. Dunk half of the cookienuts into the milk chocolate and sprinkle with crushed flakes. Once decorated place in the fridge to set.
  • Once chilled add 3 mini eggs onto each cookienut!
  • Finally, eat those cut cookienut nests!

Notes

  • Once baked, these will last 4-5 days!
  • You can freeze these cookies for up to 2 months!
