Rocky Road is a classic snack here in the UK and as it is spring time as well, it works perfectly as it is a bit warmer and sometimes I don’t want to turn the oven on when I’m already boiling!
Plus as this is a traybake recipe, it is super easy to make and perfect for beginner bakers, home bakers and literally everyone! Let’s talk about the delicious layers that make up this dessert!
- Base Mixture- The bottom layer is of course a rocky road mixture! My stepdad loves chocolate orange so I made this orange flavoured. This rocky road is packed with mini marshmallows, digestives, cornflakes and Terry’s chocolate orange! For this recipe I used the milk orange chocolate but Terry’s also does a white chocolate orange so you could use that as well! Both would taste absolutely delicious, I love a bit of white chocolate!
- Caramel Layer- We are taking the classic rocky road recipe up a notch! We do this by adding caramel which gives this recipe the millionaires title! I made this caramel using the microwave method as it is so much easier and I wanted to keep this recipe as easy as possible! Microwaved caramel is so easy, you add all the ingredients into a large microwaveable bowl and microwave the caramel in 1 minute intervals, stirring well each time, until the caramel has darkened and thickened. This can take 10-15 minutes, be careful because it does get quite hot! As this is a chocolate orange rocky road, I thought id spice this caramel up with some orange flavouring. If we are going orange, we are going ALL orange!
- Chocolate Layer- On top of the caramel layer, I added melted Terry’s chocolate orange on top and sprinkled some chocolate orange mini eggs on top as I made this in the Easter season! You could make this any time of the year by using the classic Terry’s chocolate orange on top! If you don’t have access to chocolate orange chocolate, you could use milk chocolate and add some orange flavouring!

Ingredients
Rocky Roads are literally one of the most delicious treats. They are great to have with a bowl of ice cream or hot drink, I like to have them on their own after my dinner as a little sweet treat! We always have room for a little sweet treat after dinner right?
- Chocolate- I used Terry’s chocolate orange in this recipe. Melt your milk chocolate in short bursts in the microwave and stir thoroughly in between so it doesn’t burn! If you can’t find Terry’s chocolate orange you can use milk chocolate and flavour it with orange flavouring!
- Butter- Using butter makes the rocky road a bit easier to cut into. I recommend using unsalted butter but you can use salted butter if you prefer! I also used unsalted butter for the caramel.
- Golden syrup- This helps stop the chocolate and butter splitting and also adds more sweetness! If you can’t find golden syrup, you can always substitute this ingredient for honey!
- Biscuits- I used digestive biscuits and also added some cornflakes for some extra crunch!
- Marshmallows- A must in rocky roads! Without marshmallows, you are making a tiffin!
- Caster Sugar- This is for the caramel to add some sweetness!
- Condensed Milk- This is a must for caramel! I use the Carnations caramel for this recipe!
- Flavouring- For the orange caramel, I add a few drops of this orange flavouring from Foodie Flavours!

Ingredients
Rocky Road
- 400g Chocolate Orange (Melted, see tips and tricks if you don't have access to Terry's chocolate orange!)
- 60g Golden Syrup
- 60g Unsalted Butter
- 100g Marshmallows
- 200g Digestive Biscuits (Chopped).
Caramel
- 200g Unsalted Butter
- 45g Caster Sugar
- 60g Golden Syrup
- 397g Condensed Milk
- 1/2 tsp Orange Flavouring
Chocolate Layer
- 200g Terry's Chocolate Orange or Milk Chocolate
- Terry's Chocolate Orange Decoration (Segments or mini eggs).
Instructions
Rocky Road
- Line a 9 inch square tin with baking paper/ parchment paper and set aside.
- In a large bowl, add in chocolate, golden syrup, unsalted butter and melt in a microwave in short bursts. Stir thoroughly each time until smooth.
- Once it's melted and combined, add in the mini marshmallows and chopped digestive biscuits.
- Pour your mixture into the tin and spread until it’s even (I like to flatten mine down using baking paper to ensure it is compact and not crumbly!)
- Place into the fridge while you make your caramel!
Caramel
- In a large bowl pour the condensed milk, butter, sugar, and golden syrup and melt in 1 minute bursts in the microwave.
- Stir the mixture well each time until the mixture has thickened. This can take 10-15 minutes. It will be done when it has darkened and thickened. Add in your orange flavouring and mix until combined.
- Pour the caramel onto the rocky road base and leave to set for an hour in the fridge.
- Once set, melt the chocolate and spread this evenly on top of the caramel layer. Add your decorations, whether that be chocolate mini eggs or chocolate orange segments!
- Place back in the fridge for 1-2 hours until set.
- Slice your millionaire's rocky road into 9-12 slices and enjoy!

- I did an orange flavoured rocky road but you can make whatever flavour you’d like!
