Can we just take a moment for how cute these bunny Jammie Dodgers are? They’re the perfect Easter baking treat and they’re surprisingly easy to make too. The most important step in this recipe is the chilling time. Don’t skip it! If you bake the biscuits without chilling the dough, they’ll spread in the oven and you’ll end up with sad, flat bunnies instead of cute Easter biscuits. Chilling keeps their shape and gives you those perfect bunny shapes.

Let’s be honest, Jammie Dodgers are top-tier biscuits. A buttery biscuit sandwiched with sweet jam? Yes please. But homemade Jammie Dodgers are on a completely different level. Fresh from the oven, they’re softer, more flavourful, and taste even better than shop-bought. Plus, when you make your own homemade jam biscuits, you can have fun experimenting with flavours and fillings.

For this easy Easter baking recipe, I used classic raspberry jam and tangy lemon curd for the perfect balance of sweetness and citrus. You could also add lemon zest to the biscuit dough for an extra zingy twist, or switch things up with cherry, blackberry, or blueberry jam.

Ingredients

  • Butter- Always go for block butter (not spreadable or margarine) for this recipe. It helps the biscuits hold their shape while baking and keeps them from spreading too much. For best results, let it come to room temperature before mixing, this makes the dough easier to bring together!
  • Sugar- Icing sugar is the secret ingredient to that soft, melt-in-the-mouth texture. It blends smoothly into the dough and gives a perfectly sweet biscuit!
  • Vanilla- I use this vanilla in this recipe but feel free to switch it up and use whatever flavouring you’d like! Lemon extract, almond, or even a hint of orange zest can add a fun twist to your biscuits!
  • Plain Flour- Stick with plain (all-purpose) flour here. Self-raising flour will give you a cake texture!
  • Cornflour- Cornflour in the recipe gives these biscuits a nice light, melt in the mouth texture!
  • Egg- Just the yolks are needed for this recipe! Using only the egg yolk gives the dough a rich, tender texture and helps it hold together beautifully without becoming too dry or cakey.

How To Make Easter Jammie Dodgers

Make the Dough

In a large bowl, cream together the butter and icing sugar until pale and fluffy. Add the vanilla extract and mix again.

Sift in the plain flour, cornflour, and a pinch of salt. Mix until it comes together into a soft dough! Wrap in cling film and chill for 30 minutes.

Roll and Cut Into Bunny Shapes

Preheat your oven to 180°C (160°C fan) / 350°F. Line two baking trays with parchment paper/ baking paper.

Roll out the chilled dough on a lightly floured surface to about 5 mm thick. Use a bunny-shaped cookie cutter to cut out your biscuits. On half of them, use a small heart cutter to create the little jam window (the iconic “Dodger” look)!

Bake The Biscuits

Place the biscuits on your prepared trays and place them in the fridge for 30 minutes to help your biscuits maintain their shape! Once chilled, bake for 10–12 minutes, or until just turning golden at the edges. Let them cool completely on a cooling rack.

Assembling / Decorating

Once cooled, spread a teaspoon of your chosen jam on the flat side of the whole bunny biscuits. Top with the heart cut out bunnies and press gently to sandwich. Dust with icing sugar to make them extra cute!

Ingredients

  • 240g Unsalted Butter
  • 150g Icing Sugar
  • 2 Egg Yolks
  • 1 tsp Vanilla
  • 320g Plain Flour
  • 30g Cornflour
  • 200g Raspberry Jam/Lemon Curd

Instructions

  • Beat the butter and sugar together until light and fluffy (I use a stand mixer but you could use an electric hand whisk).
  • Add in the vanilla extract, plain flour, cornflour and egg yolks and mix until a dough is formed.
  • Wrap the dough in clingfilm and refrigerate the dough for 30 minutes.
  • Roll out the dough to about 1/2cm in thickness and then cut out bunny shapes (see notes to get the bunny cutter I use).
  • You’ll need to cut a heart out of the centre of half of the biscuits you create to make the sandwiches.
  • Transfer your bunny biscuits onto a lined baking tray and chill in the fridge for 1 hour (This will help them keep their shape).
  • Once the dough has chilled, preheat your oven at 160c/ Gas mark 4.
  • Once chilled, bake for 10-12 minutes.
  • Once baked, allow to chill completely before filling.
  • On the whole bunnies add a tsp of jam or lemon curd and spread evenly (don't go right to the edges) add the other biscuit on top, in line with the other bunny! Dust with icing sugar if you'd like!
  • Finally, Eat!

Notes

  • These will last for 4-5 days at room temperature.
  • These can freeze filled or unfilled for 3+ months.
  • This is the bunny cutter I used from amazon.
  • These are the heart cutters I used for these biscuits, they come as a set but I used the smallest one for this recipe.
