Easter Jammie Dodgers

These cute bunny shaped Jammie Dodgers are soft, buttery biscuits filled with your jam of choice! Perfect for Easter baking, these homemade biscuits make the perfect Easter dessert that both kids and adults will love!

Ingredients
  

  • 240g Unsalted Butter
  • 150g Icing Sugar
  • 2 Egg Yolks
  • 1 tsp Vanilla
  • 320g Plain Flour
  • 30g Cornflour
  • 200g Raspberry Jam/Lemon Curd

Method
 

  1. Beat the butter and sugar together until light and fluffy (I use a stand mixer but you could use an electric hand whisk).
  2. Add in the vanilla extract, plain flour, cornflour and egg yolks and mix until a dough is formed.
  3. Wrap the dough in clingfilm and refrigerate the dough for 30 minutes.
  4. Roll out the dough to about 1/2cm in thickness and then cut out bunny shapes (see notes to get the bunny cutter I use).
  5. You’ll need to cut a heart out of the centre of half of the biscuits you create to make the sandwiches.
  6. Transfer your bunny biscuits onto a lined baking tray and chill in the fridge for 1 hour (This will help them keep their shape).
  7. Once the dough has chilled, preheat your oven at 160c/ Gas mark 4.
  8. Once chilled, bake for 10-12 minutes.
  9. Once baked, allow to chill completely before filling.
  10. On the whole bunnies add a tsp of jam or lemon curd and spread evenly (don't go right to the edges) add the other biscuit on top, in line with the other bunny! Dust with icing sugar if you'd like!
  11. Finally, Eat!
