This no bake frozen lemon yogurt bark is made with creamy lemon-flavoured yogurt, swirled with a pistachio spread, and finished with crunchy chopped pistachios! It’s the perfect combination of sweet, zesty, and nutty. Whether you’re craving a quick snack, a cooling dessert, or a zesty breakfast option, this yogurt bark is a must-try summer dessert. - 500ml Full fat Greek Yogurt- Use a full fat yogurt for the best texture and flavour. I use vanilla yogurt but you could use any flavour you like.
- Lemon Zest- I use the zest of two lemons for this yogurt bark to make it really zesty! Avoid using lemon juice as it may make your yogurt curdle.
- 50g-100g Melted pistachio spread- I use black milk pistachio spread as it is my favourite!
- 50g Chopped pistachios– I like to top my yogurt bark with chopped pistachios and chopped raspberries.

Tips & Variations
- Let the pistachio spread cool slightly before drizzling, so it doesn’t melt into the yogurt.
- Store the yogurt bark in the freezer for up to 1 month in a sealed container.
- Try switching up the Flavours. berry yogurt, nut butters, or granola all work beautifully!
- Top your lemon yogurt with crushed freeze-dried raspberries, raspberry jam swirls, and white chocolate chips for a delicious white chocolate, lemon and raspberry flavour combo! This sounds absolutely Delicious!

Equipment
- Large mixing bowl
- Utensils (Spatula and Knife).
- Grater
- Baking tray
- Baking paper/ Parchment paper
Ingredients
- 500ml Full Fat Greek Yogurt
- Zest of 2 Lemons
- 50g-100g Pistachio Spread
- 50g Chopped Pistachios
Instructions
- Line a baking tray with baking paper/parchment paper.
- In a large bowl mix together your yogurt and lemon zest until combined.
- Spread evenly onto a lined baking tray. (Don't spread it too thin).
- Drizzle with melted pistachio spread and swirl this through to create a feather pattern.
- Sprinkle with chopped pistachios.
- Freeze for 3 hours, break into pieces and enjoy!
