You can use homemade mince pies if you prefer, but I kept things simple with shop-bought ones, and they work perfectly. I recommend avoiding adding mincemeat on its own, as it makes the mixture too wet and prevents the rocky road from setting properly. Instead, chopped mince pies give you all the festive flavour you want, the buttery pastry and rich filling add the perfect mince pie taste and help keep the rocky road firm.

I used traditional butter mince pies, but you can absolutely use iced mince pies if you’d like something sweeter. Just keep in mind that white chocolate is already quite sweet, so it’s not essential but definitely an option!

To give this Christmas rocky road its cosy, festive twist, I added mince pies! They add that nostalgic mince pie flavour without making the mixture too soft. I also used ginger biscuits, as their warm spices pair beautifully with the mince pie filling. If you prefer something milder, you can use digestive biscuits instead, they both work perfectly.

Ingredients

  • 200g Ginger Biscuits
  • 400g White Chocolate
  • 100g Mini Marshmallows
  • 200g Mince Pies (Chopped).
  • 200g White Chocolate (Topping).
  • 50g Mincemeat (Topping).

Instructions

  • Line a 9" baking tin with baking paper/ parchment paper and set aside.
  • In a large bowl, add chocolate and melt in a microwave in short bursts. Stir thoroughly each time until smooth.
  • Once it's melted and combined, add in the mini marshmallows, chopped ginger biscuits, mince pies and mix until everything is coated in the chocolate mixture.
  • Pour your mixture into the tin and spread until it’s even (I like to flatten mine down using baking paper to ensure it is compact and not crumbly!)
  • For your topping melt your white chocolate in a microwaveable bowl in short bursts (20 seconds) and stir well in between as white chocolate can burn quite quickly.
  • Pour your white chocolate on top of the rocky road and spread it out evenly. Swirl through some mincemeat, sprinkle some festive sprinkles on top and set in the fridge for 3 hours or until firm.
  • Once set, slice into slices. I sliced mine into bigger chunks so I got 9 slices but these rocky roads are moreish so you could slice them into smaller chunks and get 18 pieces!
