These easy no-bake Maltesers Rice Krispie slices are honestly my favourite no-bake recipe right now and if you love Maltesers, you’re going to be obsessed. There’s just something about bag Maltesers that tastes better than the boxed ones… and this recipe uses plenty of them.

The base starts with a simple chocolate Rice Krispie layer, made by mixing crispy rice cereal with melted chocolate to create the most delicious crunchy no-bake base. I used classic Rice Krispies, but you could easily swap them for Coco Pops if you want an even more chocolatey slice (and I fully support that decision).

Chopped Maltesers are mixed straight into the base, but because there’s no such thing as too many Maltesers, even more are added on top. The crunchy base is finished with a smooth microwave caramel layer, making this recipe incredibly beginner-friendly, no candy thermometers or hob cooking required.

To take things to the next level, the caramel is topped with Maltesers spread for extra flavour and creaminess. If you can’t get hold of the spread, don’t worry, melted milk chocolate works perfectly and can be finished with even more Maltesers on top.

This no-bake Maltesers traybake is quick, easy and completely oven-free, making it ideal for busy days or last-minute desserts. Microwave Caramel

Microwave caramel is honestly my go-to caramel method and one I recommend all the time, especially for no-bake recipes. It’s far simpler than the hob method and much less stressful, no boiling sugar, no thermometers, and no burnt fingers. If you’ve ever struggled with stovetop caramel, this method is a game changer.

To make easy microwave caramel, simply add condensed milk, butter, golden syrup and caster sugar to a large microwave-safe bowl. Microwave in short bursts of 30 seconds to 1 minute, depending on how powerful your microwave is. If your microwave runs hot, always stick to 30-second bursts. Stir thoroughly after every burst to ensure the ingredients combine evenly and don’t catch on the bottom.

The caramel usually takes around 8–10 minutes in total and will gradually turn a rich golden colour as it thickens. Patience is key here, rushing the process can cause the caramel to split.

If your microwave caramel splits, don’t panic. This usually happens when the mixture gets too hot, causing the fat to separate from the sugar. If it’s only slightly split, you can often rescue it by using a hand blender to bring it back to a smooth, glossy consistency.

For more stubborn cases where the caramel separates into oily and sugary layers, transfer it to a saucepan over low heat. Add 1–2 tablespoons of milk, cream, or water to help re-emulsify the mixture. Whisk constantly and gently until the caramel comes back together and becomes smooth again. Once fixed, remove from the heat immediately to avoid it splitting again.

Ingredients

Rice Krispies Layer

  • 150g Rice Krispies
  • 300g Milk Chocolate
  • 150g Maltesers

Caramel Layer

  • 200g Unsalted Butter
  • 397g Condensed Milk
  • 60g Golden Syrup
  • 45g Caster Sugar
  • 80-100g Maltesers

Topping

  • 200g Milk Chocolate
  • 100g Maltesers Spread

Instructions

  • Line an 9 inch square baking tin with baking paper, leaving some overhang so the slice can be easily lifted out once set.
  • Gently melt the milk chocolate in the microwave in short bursts, stirring between each burst until smooth. Add the Rice Krispies and fold until fully coated. Stir through the Maltesers, then press the mixture firmly into the prepared tin to form an even base. Chill in the fridge while you prepare the caramel.
  • In a microwave-safe bowl, combine the butter, condensed milk, golden syrup and caster sugar. Microwave in short bursts, stirring well between each one, until the mixture thickens into a smooth caramel.
  • Pour the caramel over the chilled Rice Krispie base and spread evenly. Top with Maltesers. Return the tin to the fridge and chill until the caramel is just set.
  • Melt the Maltesers spread with milk chocolate and stir until combined, then smooth it over the caramel layer.
  • Refrigerate for at least 2–3 hours, or until fully set. Once firm, lift out of the tin and slice into squares using a sharp knife.
