Victoria Sponge Rocky Road

If you love classic British desserts, this Victoria Sponge Rocky Road is a fun and delicious twist on the iconic Victoria sponge cake we all know and love. Traditionally, a Victoria sponge is made with soft sponge layers filled with jam and cream, making it a true baking classic. But, of course, I couldn’t resist putting my own spin on it and the result is a no-bake rocky road dessert that’s perfect for spring and summer.

This season I’m all about easy no-bake desserts, simple baking recipes, and fresh spring flavours like raspberry, lemon, fruit, and light sweet treats. Turning this recipe into a no-bake rocky road means you can still enjoy a delicious dessert without having to turn the oven on during the warmer months.

This recipe keeps the classic rocky road ingredients we all love, crunchy biscuits, soft marshmallows, and melted chocolate. To bring in the Victoria sponge inspiration, I used jam and cream biscuits, which give that nostalgic jammy and creamy flavour you’d find in the traditional cake. I also added pieces of sponge cake to the mixture to really capture that Victoria sponge feel. You can bake your own sponge, or to keep things quick and easy, simply use undecorated shop-bought cupcakes.

The result is a simple, crowd-pleasing no-bake dessert that combines the textures of rocky road with the flavours of a classic Victoria sponge cake. If you enjoy traditional desserts with a twist, you might also love my other recipes like Lemon Meringue Rocky Road or Cherry Bakewell Rocky Road, which are just as fun and delicious.

Ingredients

  • White Chocolate– White chocolate is the base of any good rocky road recipe. Once melted, it binds all the ingredients together and gives the dessert its rich, chocolatey flavour.
  • Jam and Cream Biscuits– These are the key ingredient that gives this recipe its Victoria sponge twist. The jam and cream filling mimics the jam and whipped cream layers found in a traditional Victoria sponge cake, adding sweetness and a nostalgic flavour.
  • Mini Marshmallows– Marshmallows are a classic rocky road ingredient, adding a soft, chewy texture that contrasts perfectly with the crunchy biscuits and smooth chocolate.
  • Sponge Cake Pieces– Adding chopped sponge cake helps recreate the flavour of a Victoria sponge cake dessert. You can bake your own sponge or use undecorated shop-bought cupcakes to keep the recipe completely no-bake.
  • Strawberry or Raspberry Jam (Optional Swirl)– A small swirl of jam adds extra Victoria sponge flavour and a fruity sweetness that pairs beautifully with the chocolate.

Tips & Tricks

  • Don’t crush the biscuits too finely– For the best rocky road texture, break the biscuits into medium chunks rather than crumbs. This creates the classic crunchy bite that rocky road is known for.
  • Use shop-bought sponge for a quicker recipe– If you want to keep this dessert completely no-bake, simply use plain shop-bought cupcakes or sponge cake and chop them into chunks before mixing them in.
  • Let it chill properly– For clean slices, allow the rocky road to chill in the fridge for at least 2–3 hours or until fully set. This helps the chocolate firm up and hold everything together.
  • Add the sponge last– Fold in the sponge cake pieces gently at the end so they keep their shape and don’t break down too much in the mixture.
  • Line your tin with baking paper– This makes it much easier to lift the rocky road out of the tin once set and slice it neatly into bars or squares.
  • Customise your toppings– You can drizzle extra chocolate on top or add freeze-dried strawberries, sprinkles, or extra jam biscuit pieces to enhance the Victoria sponge flavour and make the dessert look even more impressive.
