Ingredients

  • Digestive Biscuits– Biscuits provide the classic crunchy texture that rocky road is known for. Digestive biscuits work particularly well because they add a subtle buttery flavour.
  • Mini Marshmallows– Marshmallows are a classic rocky road ingredient, adding a soft, chewy texture that contrasts perfectly with the crunchy biscuits and creamy chocolate.
  • Grated Carrots– Fresh grated carrots are what bring the carrot cake inspiration to this recipe. They add a subtle sweetness and help recreate the flavour of a traditional carrot cake.
  • Walnuts– Walnuts are commonly used in classic carrot cake recipes, adding a nutty flavour and extra crunch to the rocky road.
  • Ground Cinnamon– Cinnamon provides that signature warm carrot cake spice, giving the rocky road a comforting flavour.
  • Ground Nutmeg (Optional)– Nutmeg enhances the spice flavour and adds depth, making the dessert taste even more like a traditional carrot cake.

Tips & Tricks

  • Use Fresh Carrots– Grate fresh carrots finely for even distribution throughout the rocky road. Strain as much water as you can out of the carrots. Added water will stop your rocky road from setting.
  • Don’t Overheat the Chocolate– Melt the white chocolate gently over a double boiler or in short microwave bursts. Overheating can cause the chocolate to seize, which will affect the texture of your rocky road.
  • Break Biscuits into Medium Chunks– For the classic rocky road crunch, break biscuits into medium-sized pieces rather than crushing them into crumbs.
  • Fold Ingredients Gently– When mixing in marshmallows, walnuts, and grated carrots, fold gently to keep the mixture light and airy. This prevents the marshmallows from melting and preserves the texture.
  • Chill Properly– Refrigerate the rocky road for at least 2–3 hours or until fully set. Proper chilling ensures clean slices and a firm, fudgy texture.
  • Customise Your Nuts and Chocolate– Feel free to swap walnuts for pecans or hazelnuts.
  • Use a Lined Baking Tin– Line your tray with baking paper to make it easy to lift the rocky road out once set. This also makes slicing into neat bars or squares much simpler.
  • Keep it Fresh– Store in an airtight container in the fridge for up to 4–5 days to keep the chocolate firm, marshmallows soft, and carrots fresh.

Frequently Asked Questions

Why Won’t My Rocky Road Set?

If your Carrot Cake Rocky Road isn’t setting properly, it’s usually because of excess moisture from the carrots. To fix this, make sure to remove as much water as possible by squeezing the grated carrots with your hands, wrapping them in a clean kitchen towel or tissue, or using a carrot strainer bag. The drier the carrots, the firmer your rocky road will be, ensuring it sets perfectly and slices cleanly.

Can I make this Carrot Cake Rocky Road in advance?

Yes! This no-bake dessert is perfect for making ahead. Prepare it a day before and store it in the fridge. Chilling ensures it sets properly and makes slicing easier.

How should I store Carrot Cake Rocky Road?

Keep it in an airtight container in the fridge for up to 4–5 days. This keeps the chocolate firm, marshmallows soft, and carrots fresh for the best texture and flavour.

Can I freeze this rocky road?

Yes, you can freeze the bars for up to 2 months. Wrap them well in cling film or foil. Thaw in the fridge before serving to maintain the chewy and crunchy texture.

Can I use different nuts instead of walnuts?

Absolutely! You can swap walnuts for pecans, hazelnuts, or almonds depending on your preference. They all add crunch and nutty flavour that complements the carrot cake spices.

Do I have to use white chocolate?

White chocolate gives a creamy, sweet base that balances the carrot and spice flavours. You can experiment with milk or dark chocolate for a different flavour profile, but it will change the taste.

Can I make this dessert vegan?

Yes! Use dairy-free white chocolate, vegan biscuits and ensure your marshmallows are vegan-friendly to make this a fully vegan no-bake carrot cake rocky road.

Do I need to grate the carrots finely?

Yes, finely grated carrots mix better into the chocolate and help maintain the classic carrot cake texture without making the rocky road too chunky or difficult to slice.

Can I add dried fruit?

Absolutely! Adding raisins, sultanas, or chopped dried apricots is a great way to enhance the carrot cake flavour and add extra texture to this no-bake dessert.
